Alabama Extension’s Food Safety Team, in conjunction with the Auburn Food Safety Institute, has an exciting line-up of speakers this year who are sure to be inspiring while giving practical advice to food businesses. Representatives of the Alabama Department of Public Health, Alabama Extension, and successful entrepreneurs from throughout Alabama will be presenting. Mitzi Waldo and Phyllis Fenn, with the Alabama Department of Public Health, will provide a better understanding of food regulations. Dani Reams, with Alabama Extension, will discuss food testing and labeling services provided by the Extension lab. Jon Jacobson, with Alabama Extension, will share a user-friendly, hands-on, management tool for entrepreneurs. Featured speakers include Lynn Entrekin of Spices Smokehouse, the makers of Smokehouse Crackers, and Mike Prather, Director of Sales and Marketing at Flavor-Pic Tomato Company.
Alabama’s food entrepreneurs are positioned to capitalize on the nationwide trend to eat more locally sourced foods and locally produced products. With the state’s agricultural roots, food processing is a natural way to grow the state’s economy. Conference attendees will benefit from the knowledge and experience of presenters as well as having an opportunity to network with educators, regulators, and other entrepreneurs.
